    Owners Emmy Harbo and Maureen Fallon recycle every cork popped in the wine bar and 90 percent of the bar’s waste. They made Purple Tooth’s tables, bar, standing bar, register counter, wine racks and shelves themselves, using reclaimed materials. And they serve organically grown, sustainable food and wine. Plus, they re-use cardboard boxes for grilled cheese menus and other things. They use recycled paper for menus, have low flush toilets and the list goes on.

    Whenever possible, Chef Galen Simpson and his wife and Co-Owner Bridget buy meats and produce from local farmers and from organic producers who can do what they do with a minimal long-term effect on the environment. Random tidbit: The Simpsons named Dogwood after the first tree they planted together as a married couple.

    In 2006, Spoons became the first certified green restaurant in the entire state of Maryland. Owners Bernard Kayes and Deborah Cogan do too many things for the environment to list here. They even replaced the tar on Spoons’ roof with aluminum-coated rubber that reflects the sun and reduces the need to run the air conditioning, which saves electricity.
