Allison and Ben Allen (pictured), a wife and husband in their 20s—she's B-more, he's British—opened their café/ice cream parlor in January. The couple with years of kitchen and coffee shop experience served homemade soups all winter, but now that the sun is out, they're focused on churning and serving homemade, French-style ice cream. Unlike Philly-style's cream base, French-style ice cream begins with custard.
