Makdous with labneh

We tried the makdous with labneh sandwich: Pickled eggplant (makdous), hot peppers, walnuts, garlic, cucumber, tomato, green peppers and yogurt (labneh) served in a pita pocket. The pita was really soft and the pickled eggplant had a rich, olive flavor. The sandwich was smooth, flavorful and just a bit briny from the makdous. This was a triumph of taste and texture and a sandwich we'd surely eat again. We pita the fool that wouldn't try it. Heh.
