The first encounter with sauce came with the prawn chips, served with a side of fish sauce. The crispy chips were light, and, when dipped in fish sauce, crackled like crustaceous Rice Krispies treats. After mowing through a basket of those, Vietnamese vegetarian spring rolls arrived along with an order of chicken satay sticks. This is when the meal started to get interesting.
