You'd think us daft for ordering a seafood-less dish at Roy's, wouldn't you? You might even throw us a dirty look. Well, we were awestruck by this porcine treat. (Aged Cheddar mac and cheese might have sealed the deal.) According to one manager, Hawaiians love pork. The same manager claims Hawaii is one of the biggest importers of Spam. Go figure. At any rate, the sandwich isn't unlike a Cuban sandwich, though pairing sliced pork with kimchee cucumber, pineapple slaw and what we're fairly certain were julienned strips of apple adds a sweetness that makes the island bbq pork loin extraordinarily refreshing.
