Seviche

At Talara, seviche costs $9 for a 2-ounce serving. Double it for $17 or triple it for $24.
First, choose a seafood. This can be raw or cooked. (Talara even offers filet mignon or tofu options.) Second, choose a preparation. Most seviche relies on the citric acid of lime juice to "cook" the meat, but not all preparations include this. Third, enjoy.
