Avocado and corn seviche with #1 Ahi Tuna

The malanga chip garnish reminded us a little of potato chips, but they're easily ignored for the mound of fresh tuna chunks, hearty avocado cubes and corn kernels. Lime, cilantro, jalapeno and red onion rounded out the fresh, bright flavors, and our only wish was that we could have seviche served to us in a cereal bowl.
