Ingredients: Mahi mahi with bell peppers, corn and caramelized onions in a coconut curry sauce wrapped in a banana leaf and baked

Skinny: According to the chef, many (if not most) dishes in Indonesia are traditionally prepared in banana leaves. Combining this cooking technique with a Thai-influenced spicy sauce and vegetables creates an aesthetically appealing appetizer with a completely savory and tender piece of fresh mahi mahi. The banana leaf keeps all of the juices inside while the fish bakes, and the dish is served with bread to mop up the excess spicy curry sauce.
