Does the venue make the scene, or does the scene make the venue?
I think the neighborhood really makes the venue. This neighborhood, for example, because it's more family-oriented, you have families with kids coming in earlier so you have to be very family-friendly. It's casual and they pop in for a meal, and then later you get a bit of a younger crowd at the bar.

Who in Baltimore is doing it right?

In the area, I think Grand Cru does very well, because they have a specialty, and it's a small place, so it allows it. For a restaurant to do small is an advantage, especially with the economy and everything. Larger scale restaurants definitely have a harder time.
