Pan-roasted Irish bangers at Tir Na Nog

Ingredients: Colcannon is mashed potatoes made with cabbage. This dish starts with a mound of the colcannon, lots of beef broth whiskey sauce, and surrounds it with 12 bangers topped with spinach

Skinny: It would be difficult to write about Irish cuisine without including the traditional bangers and mash. The colcannon is a variation on mashed potatoes that's actually pretty good. Tir na Nog's bangers, though, weren't as good as we'd hoped. We know they're just sausage, but expected something a little more flavorful. The whiskey sauce really makes this dish. More of a broth than a gravy, it adds what the bangers lack. Overall, it's a large portion, and a good meal.—Mark Gross
